From the home fires of India on the plains around the Ganges dal puri travelled with indentured workers to southern Caribbean colonies of the British and Dutch Empires, to Trinidad, though to the USA changing ingredients and identity along the way. A testament to the power of sound, smell and taste to evoke memories.
